Recipe adapted from Kylie Kwong's Crispy Soy-roasted Pork Belly
Deviations from recipe: Left this piece marinating for 48 hours in the fridge, uncovered, as opposed to overnight and used the hairdryer trick right before it went into the oven.
Note on tools: Instead of scoring the skin with a knife, I used what Adam Liaw calls a "Pig Sticker", it looks like this (photo from AdamLiaw.com) :
I cannot recommend this tool highly enough in getting the Asian bubbly crispy skin on a pork belly roast.
